Did you know that June is National Fresh Fruit and Vegetables Month? You can celebrate by creating fresh and delicious recipes that are perfect for summer. Whether you’re having a family gathering or simply making a meal for yourself, remember to mix in those much-needed fruits and vegetables.

Here are two recipes you can whip up easily with fresh fruits and veggies that are sure to be crowd-favorites:

1. PEACH CAPRESE SALAD

What you’ll need:

  • 2 ripe peaches or nectarines, cut them into thick wedges

  • 1 pint of cherry or grape tomatoes, cut all in half

  • 1/2 cup of fresh corn kernels

  • 1/4 small sweet onion, thinly sliced

  • 8 oz. fresh mozzarella, torn into pieces

  • 2 tbsp. extra-virgin olive oil

  • kosher salt

  • freshly ground black pepper

  • 2 cups baby arugula

  • 1/2 cup fresh basil, torn into pieces

How to:

  1. Grab a large bowl.

  2. In the large bowl, toss together the peaches, tomatoes, corn, onion and mozzarella with olive oil and 1⁄2 teaspoon each of salt and pepper.

  3. Let the mixture sit for 5 minutes.

  4. Fold in arugula and basil to the bowl, then transfer to a platter.

  5. Enjoy!

2. SPINACH FRUIT SALAD

What you’ll need:

  • 3 cups fresh spinach

  • 1/2 cup blueberries

  • 1/2 cup strawberries, cut them in half

  • 1/2 cup pineapple chunks

  • 1/4 cup walnuts, chopped

  • Red onion, sliced – you can add as much or as little as you like

  • For the dressing:

    • 2 tablespoons of extra virgin olive oil

    • 1 tablespoon lemon juice

    • Add salt and pepper to taste

How to:

  1. Grab a medium sized bowl.

  2. In that bowl, add the spinach, blueberries, strawberries, pineapple, walnuts and red onions.

  3. Toss everything together so it is well-mixed.

  4. In a small jar, stir the salad dressing ingredients (olive oil, lemon juice, salt and pepper).

  5. Add the dressing to the salad and gently toss it all together.

  6. Enjoy your fresh salad!
